Mulligatawny Detox Soup

My allergies are really acting up lately and I need this soup! This recipe is amazing!! If you are sick, feeling chubby, or just need a good healthy soup this recipe is for you! 


Turn Crock Pot on High Heat

Ingredients

  • 2 Granny Smith Apples (peeled, cored and diced)
  • 6 Medium Carrots (peeled and diced)
  • 1 Medium Yellow Onion
  • 4 Cloves of Garlic (minced)
  • 1 Inch fresh Ginger (peeled and graded)
  • 2 Cups of Cauliflower Florettes (chopped)
  • 2 heaping Cups of Cabbage (thinly shredded)
  • 1 Tablespoon of Avocado Oil
  • 2 Teaspoons of Curry Powder
  • 1 Teaspoon of Tumeric
  • 1/2 Teaspoon of Cayanne Pepper
  • 4 Cups of Water
  • 2 Cups of Organic Super Veggie Juice
  • 14 oz Can of Chickpeas (drained)
Combine all the Ingredients above and let them cook down.
Cook for 4-6 hours or until vegetables are fully soft.

Then add:
  • 14 oz Can of Culinary Coconut Milk
  • 2 Teaspoons of Brown Rice Syrup
  • Salt to taste
Cook for 30 more minutes, then serve.


Serve two ways:


  • Puree to make a thick smooth soup
  • Eat as is for a Chunky soup
